End-of-day leftovers (food left over)

cooked food that was not sold must leave the stock, or its materials (chicken, rice…) stay on your books though they are gone.

• Inventory → Write-offs tab → «End-of-day leftovers» (restaurant branches only).
• It lists all menu items, the ones sold today first with how many, and a search. An item with a recipe takes its materials out of stock; an item without one is recorded by count only on the shift report (marked «No recipe — count only»). To deduct stock, add the item ingredients in Products.
• Type how many are left of each item and size (quarter / half / whole — a size takes its share of the recipe, like a sale).
• Below you see the materials that will leave stock and their cost, then press «Record leftovers».
• It is a write-off (WO-…) with the reason «End-of-day leftovers»: only materials kept in stock go out, at their cost now; entry damaged & lost goods (5155) / inventory (1140). «Cancel» gives everything back.
• The cashier can record it at the till with the «Leftovers» button (plate icon) before closing the shift.
• Pressing «Close shift» asks: «Add the leftover food?» — Yes: pick the items and how many, their materials leave stock, then the shift closes and the report prints. No: the report prints showing «No waste».
• The shift closing report (Z) lists the leftovers by item and their value.
• Reports → Leftovers report: leftover quantity and value, by day and by dish with its share of what was made, and each document with the cashier and dishes (branch and date filters, Excel and print).
• Also in Reports → Damaged & lost (reason «Leftovers») with leftovers by day and by dish and their share of what was made, so you can cook less. The raw materials report counts it as waste.
• If leftovers were already recorded today (on this or another till of the branch), Close cash shows a green box «Leftovers recorded today» with the value and dishes, and an «Add more» button. If nothing shows at all: check the branch type is restaurant and the user has the «leftovers» right in Users.
